This is what Prosecco was before Prosecco became an industry: a hazy, lightly sparkling wine that refermented itself in the bottle and was never disgorged, so it arrives cloudy with its own lees still in there. Loris Follador farms extremely steep hillsides above Santo Stefano di Valdobbiadene where the topsoil runs out after a few centimeters and the roots hit solid limestone and sandstone — vines over 60 years old, worked and picked by hand because nothing else is possible on slopes like these. No herbicides, no chemical fertilizers, just copper and sulfur against fungus, and the estate is a member of Vini Veri, the group that argues wine should be made without accelerations or stabilizations. The cellar's whole ambition is to get that stony site into the glass as directly as it can. The Follador family has never had to plant a vine — his father and grandfather saw to that, and Loris and his two sons have simply kept farming what was handed to them. Give it a gentle roll before opening if you want the sediment in, or pour carefully and leave it behind; either way, it's dry, and it's one of the great everyday bubbles.

Tasting Notes & Food Pairings

Perfect Pairings

Fried things above all: salt cod fritters, arancini, tempura shrimp, potato chips. Also prosciutto and melon, sopressa with grilled polenta, a plate of Taleggio and pickles, or brunch eggs with speck.

Tasting Profile

Cloudy and pale with a soft, foamy fizz rather than hard Champagne pressure. Dry — not the sweet commercial style. Easy to drink, with a faint funk that fans of unfiltered wines will recognize.
