Sauvignon Blanc grown on the Slovenian side of the Collio hills, where the grape gives something more textured and savory than the grassy version most shoppers know. The Simcic family farms about twelve hectares across Vipolze, Kozana and Fojana in Goriska Brda, at 90 to 300 meters on ponca — the marl-and-sandstone flysch left by an ancient seabed. Edi came to winemaking late, quitting another career at 54 to work his wife's family land; his son Aleks runs things now, with grandsons Jure and Jakob coming up behind him. The house method is severe: three passes through each parcel at harvest with berry-by-berry selection, tiny yields, and barrel aging in French oak for the whites. Serve it cool but not ice cold so the texture has room to show.

Returns & Exchanges

We stand behind every bottle we sell.

  • If the wine is less than 10 years old and it is corked, you may return it to us for a full refund or exchange within 60 days of purchase. You must show us proof of purchase. We understand that you may not live near a shop and that it is difficult to ship open bottles of wine to us, so if there's any problem feel free to Contact Us and we'll work it out.
  • For wines older than 10 years, the consumer bears the risk of a faulty cork, but we accept returns of older bottles if the wine is faulty as a result of improper storage. Please come by the store or Contact Us if there is a problem.
  • We may, at our discretion and to the extent permitted by law, accept returns of unopened wines within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.

Perfect Pairings

Grilled asparagus with olive oil, goat cheese and herb tarts, sole or branzino with green herbs, or a bowl of fresh peas and pancetta.

Tasting Profile

Citrus, white peach and elderflower with a green herbal edge and a faint nuttiness from the barrel. Dry, medium-bodied, with a fuller, rounder mouthfeel than most Sauvignon and firm but unaggressive acidity. Clean, gently saline finish.
