A Chenin Blanc from a family best known for red Bourgueil — and it's the plot they planted first. Les Rouillères sits at the eastern edge of the Anjou appellation, right where Saint-Nicolas-de-Bourgueil begins, on sandy-gravelly soil over a white clay subsoil that keeps the roots cool and the wine taut. Everything here is done the hard way and the honest way: hand-harvested whole bunches, indigenous yeasts, stainless steel only, no malolactic fermentation to soften the acidity, and total sulphites held to a barely-there 23 mg/L. The domaine has farmed organically since 2007 and been certified biodynamic since 2018, and this cuvée has only been made since 2009. The result is Chenin with the edges left on: dry, brisk, transparent, the opposite of the honeyed style the grape can drift into. For a family that has been in Saint-Nicolas-de-Bourgueil since the late 1800s and is now run by brothers Rémy and Charly, this is the bottle that shows what else they can do.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with tarragon, pork rillettes on toast, goat cheese (Sainte-Maure or Valençay), moules marinière, sole meunière, or a salad of shaved fennel, apple and blue cheese.

Tasting Profile

Dry and medium-bodied. No malolactic fermentation means the acidity stays bright and cutting, and the stainless-steel aging keeps it clean and unoaked. Finishes crisp and faintly chalky rather than rich or honeyed.
