Savart Champagne 1er Cru Extra Brut Bulle de Rose NV

$14999

Frédéric Savart is a master of precision and purity, crafting some of Champagne’s most exciting grower bottlings from his small parcels in Écueil and Villers-aux-Noeuds. Working exclusively with Premier Cru vines, Savart follows a meticulous, low-intervention philosophy, using organic methods and minimal sulfur to let the terroir shine. Bulle de Rosé is his deeply expressive, saignée-method rosé, made predominantly from Pinot Noir with a touch of Chardonnay to enhance finesse and lift. Vinification takes place in a mix of stainless steel and neutral oak, with a restrained dosage of around 2 g/L, allowing the wine’s natural energy to take center stage.

This is a rosé Champagne of striking vibrancy and depth, offering layers of wild strawberries, blood orange, and crushed rose petals, framed by a mineral backbone. The saignée method imparts a vivid color and a more structured, vinous texture, while Savart’s precise winemaking keeps the wine taut and electric. On the palate, juicy red berries mingle with citrus zest and a whisper of spice, leading to a long, saline-driven finish.

A wine of both elegance and intensity, Bulle de Rosé is a brilliant pairing for dishes that echo its bright, savory depth—think tuna tartare, duck breast with cherries, or a creamy Brillat-Savarin cheese. This is not your typical delicate rosé Champagne; it is a bold and thought-provoking expression of Pinot Noir from one of the region’s most talented hands.

"The salmon-colored NV Bulle de Rosé Premier Cru Brut offers a serious and concentrated, but discreet bouquet in its fruit and floral flavors. The palate is full-bodied and pure, with a nice expression of Pinot Noir (8% red wine here along with 70% Blanc de Noirs and 22% Chardonnay). It has very nice purity and intensity, with good grip and persistence. This is a serious Rosé to be served with food." —Robert Parker

More about Savart

It is only in recent times that Champagne Savart has begun to get a lot of buzz, since 2005, when Frédéric Savart took over the reins. As Alder eludes to in the quote above, this is a producer that deserves your attention.

The great thing about Grower Champagnes is that we can talk about places. Today we are just south of Reims in the Montagne de Reims. The name of the village is Écueil. Most of the soils are sandy, and Pinot Noir prevails. Here and there you also find strains of chalky soils, and so Savart also grows a little Chardonnay.

One village over is another place: Villers-aux-Noeuds. Anyone who pays extra close attention to this newsletter will know that this village is home to the great Emmanuel Brochet, who works a fine site called Mont Benoît. It turns out that Savart also has holdings in Mont Benoît. It’s a little chalkier than Écueil, but still pretty friendly to Pinot Noir, which is what Savart grows there.

In the cellar, Savart follows a non-interventionist recipe that includes stainless steel fermentation, aging in barrel, and a laissez-faire attitude towards malolactic fermentation. These are not fruit-forward Champagnes but wines of salinity, soil, and rock. That’s why those wine geeks are so excited!
