This is Viña Sastre's entry-level red, and it gets the kind of care most estates save for their top bottlings: hand-picked into boxes, sorted in the vineyard and again at the winery, fermented on native yeasts and bottled without fining or filtration. It's 100% Tempranillo from estate vines about 30 years old in La Horra, La Aguilera and Roa, grown on clay-limestone soil at 800 to 840 metres and farmed organically, though without certification. The label carries the name of Rafael Sastre, Jesús Sastre's late father and winemaking mentor, and the wine is made as a tribute to him. "Roble" means oak in Spanish, but the oak here stays in the background: eight months in one-, two- and three-year-old French and American barrels, with no new wood to bulk it up. Even the cold stabilisation is low-tech. The wine just moves to tanks in a part of the winery that the Castilian winter keeps cold. It's serious Ribera del Duero you can open on a Tuesday (and it's vegan, if that matters at your table).

Tasting Notes & Food Pairings

Perfect Pairings

Grilled lamb chops with rosemary; chorizo and white bean stew; patatas bravas with grilled sausages; a cheeseburger with aged Manchego; roast pork shoulder with smoked paprika.

Tasting Profile

Expect the bright, dark-fruited side of Ribera del Duero: blackberry, ripe plum and black cherry, with only a light touch of vanilla and sweet spice from the used barrels. It's typically medium- to full-bodied, with fresh acidity from the high vineyards and firm but supple tannins, finishing dry and savoury. Think of a fruitier, more youthful Rioja Crianza.
