Terroirs is the way into Agrapart, one of the Côte des Blancs' great grower houses. It's all Grand Cru Chardonnay from Avize, Oger, Cramant and Oiry, and this one comes in a 3-litre bottle made for a crowd. Pascal Agrapart's single-vineyard cuvées now carry his own name. Terroirs is one of just two blends still made from the family's remaining vineyards and bottled under the Agrapart & Fils label. Native yeasts, a mix of steel tanks and neutral oak barrels, no fining and no filtering: it's the same hands-off approach as the rarer bottlings, showing four villages instead of one plot. Pascal and his son Ambroise, the fifth generation, farm with compost, manure, homeopathic treatments and regular plowing, and they don't want a label on their farming. This is serious Champagne, and at this size it turns any dinner into an occasion.

More about

Strong and soft spoken, Pascal Agrapart has been working like this since 1984, well before today’s grower Champagne boom. Peter Liem compares his reputation for outstanding Côtes des Blancs wines to that of Anselme Selosse. Farming is intended to sync with natural cycles, and only indigenous yeast is used, capitalizing again on each plot’s unique terroir.

The house is based in Avize, in the Côtes des Blancs, and unsurprisingly focuses on Chardonnay. Agrapart creates terroir-driven and focused wines of great minerality and complexity, from plots chosen specifically for each cuvée. The farming is intuitive and meticulous; the work in the cellar is equally painstaking.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette; langoustines or scallops in beurre blanc; warm gougères; roast chicken with morels and cream; a wedge of aged Comté.

Tasting Profile

Expect the classic Côte des Blancs Blanc de Blancs profile: lemon, green apple and white flowers over a chalky, saline minerality, with hints of brioche and nutty depth from time in neutral oak. The Extra Brut style keeps it very dry and taut, with fine bubbles and bright acidity that malolactic gently rounds, finishing long, clean and mineral.
