Domaine Barat is relatively small, by Chablis standards, producing just 3-4000 cases a year. Siblings Angèle and Ludovic Barat are now at the helm of this 200 plus year old estate. The vineyard work is entirely organic, still uncommon in the region. The winemaking is straightforward and gentle, using gravity to move the juice into stainless steel tanks for fermentation and aging. No barrels are used at Barat, the emphasis is on pure, clean minerality.
