Roulot was bottling Meursault's village-level climats on their own long before it was fashionable, and Vireuils shows why that was worth doing: it's one of the highest vineyards on the commune's north slope, facing slightly east. The domaine's parcel covers just 0.67 hectares, planted in the 1950s, when Guy Roulot replanted much of the estate, so these are genuinely old vines. Over the years this cuvée has become known as Roulot's saline, mouth-watering Meursault, the one you open at the start of a meal rather than the end. In the cellar it gets exactly the same treatment as the domaine's Premiers Crus. Jean-Marc Roulot is wary of lees stirring, which he thinks adds richness at the cost of purity. Roulot is one of the few domaines that sells out before bottling, and a single-site village wine like this is one of the smarter ways to find out what the fuss is about.

More about

The name Roulot is now a synonym for the very best wine that the village of Meursault can offer. It is rather remarkable when you consider that just 2 generations back the Roulot's were known as producers of Burgundian brandy and eau de vie. But Guy Roulot began leveraging the family's distilling success to purchase small plots of vines in Meursault and by the 1970's was known as a pioneer for producing top quality chardonnay from distinct parcels or ""lieu-dits"".

When Guy passed away unexpectedly in the early '80's his son Jean-Marc was pursuing acting in Paris. In 1989 he returned to take on the reigns of the small Domaine and in the following decades built on his father's success so well that the wines are now extremely hard to acquire and to afford for most of us.

Tasting Notes & Food Pairings

Perfect Pairings

Warm gougères; raw oysters or scallop crudo with lemon; trout meunière; a wedge of aged Comté before dinner.

Tasting Profile

Expect Roulot's taut, pure take on Meursault: lemon, green apple and white flowers over a stony, saline edge, with only a hint of the village's typical hazelnut richness. Typically medium-bodied with bright acidity, it finishes dry, long and mouth-watering. Think of something closer to a fine Chablis in tension than to a buttery, opulent Meursault.
