Valentin Morel Cotes du Jura Rouge Trousseau Les Trouillots 2025

Trousseau is the richer, fruitier side of the Jura's red family, and Valentin Morel grows his on warm ground: Les Trouillots, a due-south slope looking out over the tiled roofs of Poligny that is the heart of the family domaine. His father planted the vineyard in the early 1980s, on red and gray marl over a limestone packed with fossil gryphaea shells. Valentin usually makes a separate wine from each grape variety in Trouillots, so this bottling gives you that one slope through Trousseau alone. The farming is certified organic and then some: radishes, beans and other cover crops grow between the rows and get rolled down each year instead of plowed under. Valentin sees manual work on the land as a political act, but you don't need to share his politics to enjoy what it produces. If you like Jura reds and want a bit more flesh, start here.

More about

Valentin took over a domaine his grandfather started and his father ran pesticide free, and began the conversion to biodynamics. They also have clay-limestone soils—perfect for Trousseau. The winemaking here is very gentle (manual harvests, no punchdowns, no added sulfur), which works perfectly to allow the depth of the terroir and the variety to shine, while preserving their natural lightness.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with morels and cream (poulet aux morilles), Morteau sausage with lentils, duck breast with cherries, mushroom risotto, a board of aged Comté and charcuterie.

Tasting Profile

Expect the classic Jura Trousseau profile: ripe red cherry, raspberry and wild strawberry with a dusting of black pepper and an earthy, savoury edge. Typically medium-bodied, with supple, fine-grained tannins and lively acidity, finishing dry and fresh. Think of a spicier, slightly fleshier Pinot Noir.
