Roulot's wines sell out before they're even in bottle. Clos des Bouchères is a walled 1.38-hectare slice of Meursault's Les Bouchères 1er Cru, and the domaine owns all of it. The vines were planted in 1950 and 1980 in shallow, stony soil over oolitic limestone laced with marl and clamshells. That ground gives the wine its salty streak, and the domaine describes the Clos as a stony vineyard, the one most like Perrières. Jean-Marc Roulot bought it in 2011, more than two decades after he put a Paris acting career aside to take over the family estate in 1989. He has farmed organically since the early 1990s, with no herbicides, ploughing only and yields kept down by de-budding. In the cellar he's wary of lees stirring, which he believes adds heaviness and costs a wine its purity. If you love Meursault for its limestone and tension rather than its butter, this is the bottle we'd point you to.

More about

The name Roulot is now a synonym for the very best wine that the village of Meursault can offer. It is rather remarkable when you consider that just 2 generations back the Roulot's were known as producers of Burgundian brandy and eau de vie. But Guy Roulot began leveraging the family's distilling success to purchase small plots of vines in Meursault and by the 1970's was known as a pioneer for producing top quality chardonnay from distinct parcels or ""lieu-dits"".

When Guy passed away unexpectedly in the early '80's his son Jean-Marc was pursuing acting in Paris. In 1989 he returned to take on the reigns of the small Domaine and in the following decades built on his father's success so well that the wines are now extremely hard to acquire and to afford for most of us.

Tasting Notes & Food Pairings

Perfect Pairings

Turbot or Dover sole in beurre blanc, simply grilled langoustines, a platter of raw oysters, or seared scallops with brown butter and hazelnuts. Bresse chicken with morels and cream also works.

Tasting Profile

Expect the taut, mineral side of Meursault: lemon, white peach and a touch of hazelnut over a flinty, stony core with a distinctly salty streak. Typically medium-bodied and precise rather than rich, with bright, driving acidity. Think less buttery Meursault and closer in spirit to a fine Chablis, finishing long, dry and saline.
