Le Vigne di Alice Prosecco Brut A Fondo NV

This is Prosecco the way it was poured before anyone filtered it: a bone-dry col fondo frizzante, refermented in the bottle and left on its sediment, which is the old Veneto way of making sparkling wine. A Fondo is how Cinzia Canzian finally made enough col fondo to sell. It comes from her memories of her grandmother Alice's osteria, where wines like this were poured. The name comes from "fino in fondo," going all the way to the bottom, and for her that means the soil, the native yeasts and a wine with nothing to hide. The fruit is 100% Glera from a 1.5-hectare vineyard in Carpesica at 200 meters, on lean glacial moraine full of rock and dolomite stones, weeded by hand and farmed with no herbicides or pesticides. Fermentation starts on its own, the wine finishes in bottle with must from the same vintage, and no sulphur is added. It's gently sparkling rather than fully fizzy, and beer drinkers tend to get it right away because it isn't the fruity Prosecco they're expecting. Before you open it, turn the bottle upside down to mix the sediment back in and give the wine its soft, cloudy glow.

More about

Prosecco can sometimes be dismissed as a cheap mimosa mixer and often overlooked as a serious sparkling wine. Le Vigne di Alice is an artisanal grower producer and one of these examples. Made in the champagne method, these wines embody the terroir and spirit of the vineyards in which they are planted.

Tasting Notes & Food Pairings

Perfect Pairings

Soppressa veneta and mortadella; baccalà mantecato on grilled polenta or crostini; fritto misto of shrimp and zucchini; pizza bianca with rosemary; Venetian cicchetti like sarde in saor.

Tasting Profile

Expect the classic col fondo profile: green and wild apple, white flowers, a little lemon and a yeasty, bready note from the lees, with a stony, mineral edge. The bubbles are soft rather than foamy, the body light and the acidity bright, and it finishes bone-dry and slightly savoury. Think dry cider more than the fruity Prosecco most people know.
