Saetti may be the furthest you can get from industrial Lambrusco. Saetti is a person, not a factory (his first name is Luciano). He makes sparkling red wine from the Lambrusco strain called Salamino, found only in Santa Croce. His work is Champagne-like, including bottle fermentation. In fact, it's quite like Selosse's more radical followers: no sulfur, no dosage, no interventions.
It's a natural wine, but clean and pure, with black cherries framed by the gentle minerality that can be associated with the winery's limestone soils. It's a wine that seems to go back and forth from its serious side to fizzy fun.
Really, it's not all that hard. A plate of charcuterie with a bottle of Saetti and life is good.
