Sparkling wine is wine with bubbles... prosecco, cava, cremant and, of course, the queen of them all, Champagne.

But where do the bubbles come from? Well, you could add carbon dioxide like some fountain soda, but that's not how you make real sparkling wine. The same yeast that converts sugar into alcohol (to change juice into wine) makes CO2. Keep the fermenting juice in a closed and container and that CO2 will dissolve into the liquid until the day you open the bottle and...  bubbles!
