4th generation wine grower Roberto Oliván farms 30 plots that make up roughly 10ha — that’s a lot of teensy parcels. His vines are largely high elevation, some reaching up to 700 meters in the foothills of the Sierra de Cantabria mountains, and most of his plots are made up of interspersed red and white grapes — all of his red wines contain white grapes. In the time of global warming, that’s a feature, not a bug, as it helps keep the wines fresh and bright.
