One of the world's most authentic cherry lambics, from a family operation in Beersel tracing back to 1883. 3 Fonteinen macerates whole hand-picked sour cherries—one kilogram per liter—on young spontaneously fermented lambic for at least four months. Unlike many cherry beers that rely on extracts or syrups, this is the real thing: wild yeast, whole fruit, and patience. The result is a complex, tart-yet-elegant ale that bridges the worlds of beer and wine. Cellars beautifully for a decade or more. Serve slightly chilled in a tulip glass.
