A. Margaine focuses on Chardonnay in the vallage of Villers-Marmery, producing sophisticated, elegant wines in a variety of bottlings. There are no cookbooks in the Margaine celler. Each year the fruit is treated to whatever Arnaud and his daughter think is best for the vintage. The rosé is one of the most surprising wines I've had this year. Made from 75% Chardonnay, 17% Pinot Noir and the rest is still Côteaux Rouge. Incredibly light, airy Chardonnay minerality with the with tart cherry, red apple and rose petal aromatics of Pinot Noir, delicate and complex, a value in rose Champagne.
