Amaury Beaufort makes this Brut Nature Champagne from a single hectare in Polisy, planted in 1971 on Kimmeridgian limestone. Farmed without chemicals and vinified with native yeasts, the base 2020 cuvée is aged in foudre and neutral barrels, then spends nearly two years on lees.

Made without dosage or added sulfur, it’s a pure Blanc de Noirs expression. Textured and mineral, with layered depth and crystalline precision.
