"The 2024 Xarel·lo Gres from Penedès originates from calcareous soils. It opens with aromas of pear, fennel and light herbs. On the palate, the wine is saline and fresh, with a soft chalky texture. Agile and precise, it ends with a subtle bitterness that underlines its length." —Joaquín Hidalgo

More about Anima Mundi

Agustí Torello Roca comes from a long line of Cava producers, but he’ll be the last. He got sick and tired of having his excellent wines given the same label as mass market sparkling wines made by every industrial wine entity in Spain. The regulations were too lax, the quality too low. And he wasn’t alone in this frustration. Many of Spain’s best sparkling wine estates felt the same way — Raventos, Recaredo, Ramona — and made the switch to new, quality-focused DOs.

So he joined the Classic Penedès DO, unique for its requirement that all grapes used must be farmed organically. Other indicators of quality are strictly regulated, like aging time and geographic boundaries. We’ve written about AT Roca, Agustí’s first personal project — incredibly elegant sparkling wine with complexity, minerality and a real sense of place. But one of our favorite wines from Agustí is a little more…unexpected.

After founding AT Roca — which, again, is committed to organic farming — Agustí knew he could do more. His side project, Anima Mundi, is made with fruit farmed biodynamically, that is treated very minimally in the cellar with a variety of winemaking techniques. His Cami del Xops is a fizzy, frothy and festive pet-nat made with Xarel-lo and Macabeu, two of Cava’s most important grapes. They are noteworthy for the savory, herbaceous character they bring to the final blend; calcareous soils bring a special minerality unique to chalky or limestone-rich soils.
