This is a rare chance to taste what nearly four decades in bottle does to a California Cabernet, and it comes from the oldest continuously operating winery in the state. Brothers Jacob and Frederick Beringer founded the house in St. Helena in 1876. They picked the Napa Valley because its climate and hillsides reminded them of home on the Rhine, and from the start they wanted to make California wines that could stand next to Europe's great ones. They were also among the first in Napa to build a gravity-flow winery and to hand-dig caves into the hillsides. Frederick's 17-room stone mansion, the Rhine House, is on the National Register of Historic Places and is still the centre of the estate. The house credits winemakers Myron Nightingale and Ed Sbragia with taking its Cabernet in new directions, and this 1987 Private Reserve is a mature bottle that shows where that ambition led. Stand it upright for a day or two before opening and decant it gently off any sediment.

Tasting Notes & Food Pairings

Perfect Pairings

Roast leg of lamb with rosemary and garlic, prime rib with its own jus, beef Wellington, wild mushroom risotto, or a wedge of aged Comté or clothbound cheddar. Keep the sauces simple so the wine's mature flavours come through.

Tasting Profile

Expect the profile of a mature Napa Valley Cabernet Sauvignon: dark fruit softened into dried cassis and plum, joined by cedar, tobacco, leather and earthy, savoury notes. Typically full-bodied but rounded, with mellowed tannins and fresh acidity still holding it together, finishing dry, long and gently spiced. Think of a mature Bordeaux with a riper, warmer core.
