This is the house wild blonde — Voirons with nothing to hide behind. LUG is the brewery's everyday range, made in Lucinges at 700 meters in the Haute-Savoie with alpine water drawn from the same aquifer as Evian. Blonde Sauvage is wild-fermented and aged around six months in old barrels, landing in the lovely country between a saison and a young lambic: soft funk, light orchard fruit, and a chalky mineral snap on the finish. No fruit, no spice, no barrel showboating — just a pure exercise in fermentation, which is the hardest thing to pull off. Certified organic, unfiltered, unpasteurized. Serve it cool. It's the small bottle you open first.
