"The straw-yellow to white-golden colored NV Bulles de Comptoir #3 is a blend of Pinot Noir, Pinot Blanc and Chardonnay and is based on the vintages 2011 and 2010. Aged partly in oak for 12 months and bottled in December 2012, this sample was dosed with five grams per liter as Extra Brut when disgorged in June 2014, with no sulfur added. This is a gorgeous Champagne: vinous and spicy on the nose, with mineral and discreet red and white fruit aromas intertwined with delicate citrus fruit, gin and brioche notes. This is an intense yet pure, fine and very elegant cuvée with firm grip and a long, persistent, mineral and tonic finish. Just fabulous as an aperitif but also with food, especially fish, veal and cheese. Tasted July 2018." —Stephan Reinhardt

More about Charles Dufour

Antoine Chevalier is farming 2.5 hectares of the 60 hectares in total planted in the tiny village of Vitry-en-Perthois. He is the only grower in the village to vinify and bottle his own wine. Here Chardonnay is king and the soils are pure Turonian chalk.

Antoine’s family’s story begins in 1925 when his great grandfather, Guy, a farmer by trade, bought land here and first planted vines. For years, the Chevaliers sold fruit to the grand marques and eventually to the local co-op which they were instrumental in helping to establish.

Despite Coteaux Vitryats’ reputation for producing high quality Chardonnay, there was little to no history or tradition of estate bottling. In 2014, after working in wine regions around the world, Antoine along with his partner Aurore, returned to Vitry-en-Perthois to take over his tiny parcel of family vines with a drive to make wines that would, for the first time, let these unique terroirs speak for themselves.

Antoine immediately converted to organic viticulture with a special focus on cover crop and soil health. He tools around the vineyards in a restored vintage Volkswagen bus. Harvest is performed by hand, whole clusters are pressed in a vertical basket press and allowed to ferment naturally. The wines are vinified and aged in a combination of sandstone globes and 225L used oak barrels. Vin clair is aged for 10 months before bottling and the wines age for 36 months sur-lattes before disgorgement. Dosage is kept to a bare minimum if used at all.
