Chateau Pavie Bordeaux Blend 1998

This is where modern Pavie begins. 1998 is the year Gérard and Chantal Perse bought the estate, and the château itself names this vintage as the moment Pavie's taste profile changed. Perse had already overhauled Château Monbousquet, and he started a top-to-bottom restructuring of Pavie right away. The weather helped, especially on the Right Bank: an almost rainless August produced tiny, sugar-rich grapes, the Merlot ripened beautifully and the Cabernet Franc was very high quality too. The blend is 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon from vines averaging 47 years old. Yields were kept to a low 32 hl/ha, and the wine spent 18 months in all-new oak. If you're curious about the estate that went on to be promoted to Premier Grand Cru Classé "A" in 2012, this is the bottle that shows its turning point. (A bonus fact: the name comes from the red-fleshed "Pavie peaches" that grew on the hillside before it was planted to vines.) Decant it and give it time in the glass.

Perfect Pairings

Rosemary-roasted leg of lamb; duck breast with a cherry or morello sauce; beef Wellington; braised short ribs over wild-mushroom polenta.

Tasting Profile

Deep ruby. Spice, cinnamon, cherry jelly, candied morello cherry and cocoa on the nose. The body is rich and opulent, with tight-knit, elegant tannins and a very long, fresh finish.
