This is the Erbaluce the family itself reaches for. Of all the ways Cieck bottles the grape, this still version is the one Marilena Falconieri prefers, and she's married to Remo Falconieri, the founder. Erbaluce is an ancient white grape native to the Canavese, between Turin and Ivrea, and Cieck grows almost nothing else. For this cuvée the house blends grapes from several of its own vineyards: pergola-trained vines averaging 50 years old, on loose, stony moraine soils about 320 meters up, facing south and southwest. In the cellar the house keeps it simple and focused on freshness. If your Piedmont whites stop at Gavi and Arneis, this is a rewarding next step: a rare native grape, made in its most direct form by the family that helped win Erbaluce its DOCG in 2010. Serve it cool rather than ice-cold, around 10–12°C, as the producer advises.

Tasting Notes & Food Pairings

Perfect Pairings

Pan-fried trout or lake perch with butter and sage; vitello tonnato and other Piedmontese antipasti; asparagus risotto; vegetable fritto misto; a light spring pasta with peas and ricotta.

Tasting Profile

Expect the classic still Erbaluce di Caluso profile: lemon, green apple and white flowers, with a touch of chamomile and a stony, mineral edge. It's typically light to medium-bodied with high, mouthwatering acidity, and it finishes dry and clean with a faint bitter-almond note. Think of a zestier, more racy Gavi.
