A clear, unaged tequila from El Pandillo, the Jesús María distillery where Felipe Camarena does everything the hard way. Where the other spirits made under that roof are cut with a blend of harvested rainwater and spring water, Terralta is built entirely on water pulled from a well roughly 150 metres down, and that deep-well mineral streak is exactly what you taste. The agave is highland blue Weber from Jalisco's Los Altos (Terralta means "high land"), cooked in custom stone ovens and crushed on a mechanical tahona Camarena welded together from junkyard parts and nicknamed "Frankenstein," then fermented with house yeasts his grandfather first propagated. It's 100% blue agave at 80 proof, with nothing added — no glycerin, no oak to hide behind. Which is the point of a blanco: this is the distillery's fingerprint with the volume up, and it's one of the more distinctive ones in the highlands.
