A dry vermouth from the town that gave the style its name. Chambéry, in the French Alps, is the only French vermouth ever to earn its own protected appellation, and Distillerie des Alpes still works to those historic standards, following recipes Philibert Routin laid down more than 130 years ago. Seventeen botanicals — wormwood, juniper, rosemary, rose petals and bitter almond among them — macerate for up to four weeks in Jacquère, the crisp local white of Savoie, which is then blended with Sauvignon Blanc. That alpine base is why it drinks so much lighter and more floral than the heavier Marseillan-style dry vermouths, and why it makes such a clean, herbal martini. Keep it in the fridge once opened; it is also very good simply poured over ice with a twist.
