Domaine Testut Chablis 1er Cru Vaillons 2023

Vaillons is the great left-bank Premier Cru of Chablis, a broad south-east-facing amphitheatre of Kimmeridgian marl that gives leaner, more chiselled wines than the richer right bank, and Testut has quietly become one of the best-value addresses for it. Cyril Testut took over the family's thirteen hectares in 1998, at first selling most of the fruit, and now bottles everything himself from vines that average over fifty years across the estate and older still in the crus, most of them massale selection. Everything is hand-harvested and vinified, aged, and bottled at the domaine, with the emphasis on balancing ripeness against Chablis minerality rather than chasing either one. The warm 2023 season gave a generous, open version of the site with the structure to hold. Good now with air, better with two or three years.

"A fresh, ripe and airy nose offers evident Chablis elements in the form of oyster shell, iodine, white pepper and a whiff of just grated grapefruit. I very much like the mouthfeel of the gorgeously textured medium-bodied flavors that flash a touch of minerality on the clean, dry, focused, balanced and youthfully austere finale that displays good power, Lovely and very Vaillons." —Allen Meadows

Tasting Notes & Food Pairings

Perfect Pairings

Sole meuniere, crab cakes, roast chicken with tarragon, or a cheese souffle.

Tasting Profile

Dry and medium-bodied, with ripe white and yellow peach, apricot and lemon cut by a tidal-pool salinity. Bright acidity, a firm and almost grippy finish, and real length. Youthfully austere at the end; it will soften.
