Santa Catarina Minas is the Oaxacan village known for distilling mezcal in clay pots instead of copper, and this is the bottling that put that style on most American back bars. The Arellanes family has been distilling here for generations: mature highland espadín is roasted about four days in wood-fired earthen pits over guamúchil and mesquite, fermented with wild yeast, then twice distilled in small ceramic stills fitted with bamboo tubes. Clay yields a rounder, earthier, less sharply smoky spirit than copper does, and at 47% it has weight without heat. Drink it neat at room temperature, in a copita, and give it a few minutes of air before the first sip.
