Agave cupreata is the signature maguey of the Río Balsas basin, and it is a far more aromatic plant than the espadín that dominates Oaxaca — slower-growing, smaller, and much harder to farm. Emilio Vieyra, sixth generation at Don Mateo de la Sierra and the first certified mezcalero in Michoacán, works it in the temperate highlands above Morelia: agave roasted in a conical earthen pit, milled, fermented naturally in wood-lined underground tanks with spring water, then twice distilled in the hybrid copper-and-wood Filipino stills particular to western Mexico. The spirit then rests in glass for at least six months before bottling at around 46%. Where a lot of mezcal announces itself with smoke, this sits at the bright, high-toned end of the category.
