Bottled at 90 proof instead of the usual 80, this is blanco tequila with the volume turned up — and with nothing added to it, that extra strength reads as more cooked agave rather than more heat. It comes from Hacienda El Mexicano in Arandas, a family-owned distillery the Bañuelos family built themselves (NOM 1588 appears on every bottle), right down to the walls, which got their terracotta colour from paint mixed with red clay soil dug out of the property. Unaged and clear, it's the house style with nothing between you and the agave: where the Reposado and Añejo pick up vanilla and orange marmalade from new American and French oak, this one shows you what the distillate actually is. That makes it the bottle to reach for when the tequila is the point — and the one that holds its shape when a Paloma or a Margarita would otherwise drown it.
