Chenin Blanc is the rare grape that is world-class dry, sweet and sparkling, and this is Chidaine's case for the third one. It comes from the same Vouvray vines as his still wines, chalky limestone and clay, dry-farmed and worked biodynamically, made by the traditional method with indigenous yeasts, aged on its lees and bottled with no dosage at all. Nothing has been added to soften it, so what is in the glass is unsweetened Chenin with a fine bead: citrus, quince and stone-fruit blossom over a mineral snap. Like his other Vouvray-grown bottlings it carries a Vin de France label, because the cellar is across the river in Montlouis. A serious aperitif that does not cost what serious aperitifs usually cost.

More about Francois Chidaine

François Chidaine is truly one of the Loire's greatest winemakers. Chidaine is based in Montlouis, but has wonderful holdings just across the Loire in Vouvray as well. Farming is organic with some biodynamic practices, but these taste more "classic" than "natural." Chidaine's style is very refined and broad, the wines possessing great depth with no hard edges or rusticity.

Sadly, Chidaine can't label his Vouvrays as such. It's due to an unusual and unhelpful change in law that requires Vouvray to be vinified within the borders of the AOC. Until this law gets reverted back, all of Chidaine's Vouvray cuvées, vinified within sight of the AOC, will be labeled "Vin de France."

Yet these are all world-class wines that are wondrous at the dinner table but also capable of aging decades in the cellar.

Tasting Notes & Food Pairings

Perfect Pairings

Oysters, fried smelts, potato chips with creme fraiche. It also opens dinner well alongside goat cheese, charcuterie, or a plate of radishes and butter.

Tasting Profile

Citrus, quince and stone-fruit blossom, with a fine, persistent bead. Bone dry with no dosage, which leaves the acidity exposed and bracing, while the lees aging supplies just enough breadth. Fresh, linear and mineral through the finish.
