A Día de Muertos limited edition from G4 — an añejo from the "de Madera" line, which in this house means the agave is fermented in wood rather than stainless steel. That single choice is why these bottlings taste different from the standard range: wood fermentation adds a layer of spice and texture before the spirit ever sees a barrel, and then the añejo aging (one to three years in oak, per Mexican law) rounds it out. Everything behind it is the usual El Pandillo obsessiveness in Jesús María, high in the Los Altos of Jalisco, where fourth-generation distiller Felipe Camarena cooks agave 22 hours in stone ovens, crushes it with a handmade metal tahona nicknamed "Felipestein," and double-distills in copper. No additives, ever. Special releases from this distillery don't hang around, and this one is worth grabbing while it's on the shelf rather than waiting to think about it.
