The designation dates to an 1897 law written in response to rampant adulteration in American whisky: age it in a federally bonded warehouse under government supervision, bottle it at exactly 100 proof, no blending across seasons. Dickel is made in Cascade Hollow outside Tullahoma, where the spirit is chilled and filtered through charcoal before it ever sees a barrel — a habit that traces back to George Dickel himself, who thought winter-made whisky tasted smoother. He was a Nashville merchant who set out at 54 to make something that could stand next to fine Scotch, which is why the label spells it "whisky" without the e.
