Heater Allen has been brewing German- and Czech-inspired lagers out of McMinnville, Oregon since 2007, back when nearly every other American brewery was pointed squarely at hops. The Pils is the house calling card, and it is the hardest kind of beer to make well: long cold lagering, delicate malt, and absolutely nowhere to hide. It arrives at 5% ABV in 16-ounce cans, four to a pack. Serve it cold but not ice cold, pour it into an actual glass, and drink it fresh. Crisp, dry, and engineered for a second one.
