A New Zealand hop showcase from a Chicago brewery that builds every recipe around hops: Cool Bay is a 6.5% IPA built on Nelson Sauvin and Southern Cross. The current bill pushes further, adding Citra, Nectaron and a dose of Kohia Nelson SubZero hop kief — concentrated hop resin rather than more cones, which is exactly the kind of experimentation Hop Butcher is known for. Hops come first in every recipe here; everything else in the beer is built around them. The name riffs on Carl Sandburg's "Chicago," which called the city "Hog Butcher For the World" back when the Union Stock Yards were still running (they closed in 1971) — and the "Butcher" half is meant sincerely, a nod to the approachable neighborhood shops the brewery's people grew up around. Dan Grzeca's label art is worth a look before you crack the first one. Sold as a four-pack of 16oz cans, and best drunk young and cold.
