Michel Huard-Guillouet Calvados Hors d'Age

A blend that starts at six years old and reaches back thirty — this is Calvados with real age on it, and it's the bottle to reach for if you want to understand what barrel time does to apple brandy. Jean-Francois Guillouet distills in Caligny, in the hilly Suisse Normande, from fruit grown on his own fifteen-hectare farm: nearly 1,800 full-size standard trees on silt-and-clay loam, about thirty apple varieties, mostly sweet and bittersweet. The cider ferments and rests eight to twelve months before a single pass through a traveling wood-fired column still, then goes into used French oak — the big elongated casks blackened by generations of use, or well-seasoned 400-litre barrels. What we love is the proofing: rather than dropping the strength in one shot, Guillouet brings it down slowly over years with low-mineral water from a well on the property, which is why it drinks so seamlessly. The Huards have farmed Le Pertyer for seven generations; Jean-Francois took over in 2012 when his grandfather Michel died, and the farm remains one of the most admired in the appellation. For anyone who has only ever had young, fiery Calvados, this is the correction.
