A Santa Cruz brewery best known for hazy, foggy IPAs decided to build a Munich Helles the slow, unglamorous way — double decoction in copper kettles, horizontal lagering tanks, natural carbonation, no shortcuts. That's a lot of labor for a beer whose whole job is to taste like nothing is happening, which is exactly the point: Helles is the style that hides nothing, so every step has to be right. At 4.9%, it's built for the second and third can rather than the first, which is why it comes as a four-pack of 16oz cans. Fans of the brewery may recognize the liquid — this is the same recipe they used to sell as "The Authentic DDH," now simply called what it is. Proof that the same people doing pastry stouts and barrel-aged saisons can also just brew a clean lager, and brew it seriously.
