If you know Amalfi limoncello, this is its quieter sibling, and arguably the more interesting bottle: all Amalfi mandarin, with nothing added to cover it up. Valentino Esposito and Mario Anastasio pick organically grown Marzatico mandarins from the Amalfi hillsides in season, between January and April. They peel them by hand and put the peel straight into pure grain alcohol to steep for three to four days. That's the whole recipe. There are no preservatives, colourings or stabilizers, and the liqueur isn't filtered. With a liqueur like this, the fruit is the whole story, and southern Italian citrus tastes nothing like what grows in the US. All of it happens in a small facility in Praiano, just down the coast from Positano, which looks more like a big kitchen than a distillery. Shake the bottle before you pour, and serve it cold but not iced as a digestivo. You can also add a dash to good Prosecco for an easy aperitivo.
