Sake, dry-hopped like a craft IPA — that's the whole idea here, and it works. Hanakaze is built on a junmai base of Akita-grown rice milled only lightly (a 90% polishing ratio, meaning barely any of the grain is shaved away, the opposite of the polished-to-perfume ginjo school), then dry-hopped with varieties chosen for their Sauvignon Blanc-ish aromatics. The result is faintly cloudy, lightly sparkling, and pitched squarely at anyone who thinks they don't like sake. The brewery behind it, Ine to Agave, is a young operation in Oga City on Akita's coast in northern Japan, set up in a converted railway station building and named for the rice plant and the agave — two grains-and-plants traditions the founder wanted to see meet. Because the hops put it outside Japan's legal definition of sake, it's brewed under a separate licence as "craft sake," which is less a loophole than a license to experiment. At 14% alcohol and best served cold, it's one of the more genuinely fun bottles you can put in front of a table.

Returns & Exchanges

We stand behind every bottle we sell.

  • If the wine is less than 10 years old and it is corked, you may return it to us for a full refund or exchange within 60 days of purchase. You must show us proof of purchase. We understand that you may not live near a shop and that it is difficult to ship open bottles of wine to us, so if there's any problem feel free to Contact Us and we'll work it out.
  • For wines older than 10 years, the consumer bears the risk of a faulty cork, but we accept returns of older bottles if the wine is faulty as a result of improper storage. Please come by the store or Contact Us if there is a problem.
  • We may, at our discretion and to the extent permitted by law, accept returns of unopened wines within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.

Tasting Profile

Faintly cloudy with a slight pink cast and a light spritz. The nose is hop-driven — grapefruit, lime, lychee and Muscat — over a soft rice sweetness. Light-bodied, gently sweet rather than dry, with fresh citrusy lift in place of tannin and a clean, quick finish. 14% alcohol. Serve cold.
