A straight-down-the-line German-style pilsner from the Texas brewery best known for wild ales and spontaneous fermentation — and that's exactly why it's worth your attention. Jester King made its name on 165 acres of Hill Country farmland outside Austin with funky farmhouse and barrel-aged beers, but the house has long kept a quiet sideline in unfiltered German-inspired pale lager, brewed with its own well water and Hallertau Mittelfrueh hops. The Satyr follows that thread: Weyermann Pilsner malt with a touch of Carafoam, Hallertau Mittelfrueh and Tettnanger for the bitterness and that grassy, floral lift, and it goes into the can unfiltered and unpasteurized, the way a Franconian keller pils would be poured at the source. The satyr on the label is a revival of the figure that decorated Jester King's very first tap handles, which tells you how seriously they take this one. At 4.8% it's the rare beer you can drink all afternoon without losing the thread. Four 16-oz cans, and honestly the format is the point.
