Malvasia Istriana grown on the Carso, the bare limestone plateau above Trieste where the topsoil is measured in centimeters and the Bora wind tears down off the karst toward the Adriatic hard enough to bend the vines. Edi Kante is the man who put this place on the wine map, and he did it partly by blasting a three-level cellar eighteen meters straight down into the karst so his wines could age at the rock’s own temperature. Where his Vitovska is all crushed stone and mint, the Malvasia is the aromatic one — raised about a year in old barrels, then bottled unfiltered, so the perfume arrives with real texture underneath it. It tastes like a wine from a place that is half mountain and half sea, which is precisely what the Carso is. Give it a big glass and don’t serve it too cold.

More about Kante

Where are the best white wines of Italy produced? There are lots of regions vying for the title, but today we will focus in on one producer, Edi Kante, whose wines make the compelling case that it is Friuli that is king.

Just looking at geography and soil, you might guess that Carso, a part of Friuli lying just outside of Trieste, is a superb place to make white wine. The soils are pure gray limestone. Cold air rushes down from the Alps, keeping the weather fresh and acidities high. The collision of cultures in this part of the world – first between Venetians and Austro-Hungarians and later between Italians and Slavs – has resulted in an incredibly open and innovative culture that resulted not just in espresso but also an incredible range of wine-making techniques and grape varieties.

No wonder that it was here that Gravner – often considered the greatest white wine producer in Italy – emerged on the scene, and no wonder it is that we also find here Edi Kante.

Kante took over his family winery in the late 1980s and ever since he has been experimenting. He has tried different grape varieties, played around with orange wine, and experimented with all manners of vessels for fermentation and elevage.

Tasting Notes & Food Pairings

Perfect Pairings

Adriatic seafood above all: grilled branzino, scampi, brodetto, or fried anchovies. It also takes prosciutto di San Daniele, asparagus, and pasta with clams.

Tasting Profile

Floral and aromatic on the nose — white peach, apricot pit and dried herbs. Medium-bodied and dry, with a waxy, faintly grippy texture from the barrel aging and firm acidity. The finish is salty with a note of almond skin.
