Arroqueño is one of the great slow agaves — the plants behind this bottle were 18 to 23 years old — and the Arellanes brothers distill it the old way, in Santa Catarina Minas, the Oaxacan village where mezcaleros still work with clay pot stills instead of copper. Germaín, Bezaleel and Armando are the eleventh generation of their family to make mezcal here: maguey roasted in a wood-fired earthen pit, then distilled in small clay ollas. This one rests about five months in French oak that previously held Armagnac and is bottled undiluted at full barrel strength, 49.8% ABV, from a batch of just 280 liters. They replant three agaves for every one they take. Drink it neat at room temperature, in a copita — ice and water flatten a spirit like this.
