The benchmark for sherried Scotch, and the bottle most people mean when they say they like sherry cask whisky. It's matured a minimum of twelve years on the Macallan estate in Speyside, exclusively in hand-picked Oloroso sherry-seasoned casks from Jerez — and Macallan owns that supply chain end to end, sourcing the oak, coopering it and seasoning it in their own Spanish bodegas. Getting one cask ready takes roughly six years from tree to fill, which is a lot of patience to sink into a container. The spirit going in is dense and fruity, distilled in the distillery's famously small copper stills, whose shape and size are remarkably close to those used in 1824. For the price of admission to a distillery this famous, it remains the most honest expression of what it does.
