A whiskey that deliberately gives up the right to call itself bourbon. Rob Easter distills this from a high-rye bourbon mash — 60% organic Floriani Red Flint corn from regenerative farmer Fritz Durst in Yolo County, 40% Abruzzi rye, a low-starch variety full of aromatic oils, grown by James Beard winner Farmer Mai in Sonoma — then ages it a minimum of four years in used Seguin Moreau Napa Cooperage American oak instead of the new barrels the bourbon rules require. The point is that new oak's vanilla and caramel would bury grain this interesting, so legally this lands as a "whiskey distilled from bourbon mash," which is the whole argument in one clumsy phrase. Double distilled grain-on in copper pots at a now-defunct California distillery, bottled from a single cask at 50%, lightly micron-filtered and never chill filtered. Easter calls what he does "liquid agriculture," and for once that isn't marketing: this tastes like the corn and the rye rather than the barrel, which in American whiskey is rarer than it should be.

  • We may, at our discretion and to the extent permitted by law, accept returns of unopened spirits within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.
