A Festbier made the hard way: open fermentation with a lager yeast, which almost nobody does anymore now that the entire world's lager sits in sealed tanks. OEC brews on a Kaspar Schulz brewhouse built in Bamberg, with a direct-fired copper-bottom kettle that lets them run decoctions and turbid mashes for extra body and texture — this one gets a traditional step infusion mash of German Pilsner, Munich and Cara malts, hopped in that same copper kettle with Tettnang and Spalt Select to keep the malt in check. There's no whirlpool in the building, so every batch spends an hour in the copper coolship blowing off any last stray aromas before it hits the Baudelot cooler and starts fermenting. The result pours light amber under a fluffy white head — the modern Munich festival style, golden-toned rather than dark and heavy. All that German equipment and old-school process for a beer that is fundamentally about drinking several, which is exactly the point of Oktoberfest. Four 16oz cans.
