Celles-sur-ource, Aube. All the wine is from a single vintage, but it is not labeled as such. Hand harvested and sorted. Vinified and aged without added SO2. Primary fermentation and malolactic fermentation in tank. Secondary fermentation with cultured organic yeast strains in bottle, aged for 36 months on lattes. Disgorged 6 months before release. Extra Brut dosage: 3g/l

Whatever your school was like โ€” football? yearbook editor? trigonometry? โ€” it was no doubt quite different than wine school in Beaune, Burgundy. There, the likes of David Croix, Mathilde Grivot, Amรฉlie Berthaut and Armand Heitz hung out drinking at Le Square and learning how to make wines. All of them are now on their way to becoming Burgundyโ€™s new crop of stars.

Not everyone in that crowd ended up in Burgundy. Sometimes we forget how close Beaune is to Champagne, especially the Aube. If you grow up in the Aube, you actually live closer to Beaune than to Reims and many Aubois go to Beaune for schooling.

So it was that Aurรฉlien Gerbais ended up in Beaune, palling around with many of Burgundy's future stars. He even worked at one of Burgundy's well-established stars, Olivier Lamy of St. Aubin. After that amazing hands-on experience he eventually made his way back to Champagne to join another group of visionaries, Aube stars like Cedric Bouchard, Vouette & Sorbรฉe and Ulysse Collin. Even so, to this day he says, โ€œI consider myself more Burgundian than Champenois.โ€ Thatโ€™s the Aube for you.

Gerbaisโ€™ family domaine is in the village of Celles-sur-Ource. The soils are Kimmeridgian, though there's a sector where the limestone-clay mix is nearly identical to what you find in the Cรดte dโ€™Or. His family has farmed organically since the 1990s, but when Aurรฉlien took over (this is recently; heโ€™s still in his 20s) he brought Lamyโ€™s obsessive farming home with him, elevating the domaine's game even further.

"The NV Extra Brut Les Grandes Cรดtes is a pure Pinot Noir from Celles-sur-Ource, made from a perpetual reserve spanning the vintages 2011 to 2019. Reductive funk on the nose dissipates into yeasty lemon notions. It is on the palate that the depth of the white pepper and tart apple flesh becomes apparent. The elegant mousse underlines the nobility of Pinot Noir even more with its salty tang and reductive treatment here. Wafting from the glass with aromas of peach, orange oil, pear, beeswax and fresh bread, it's medium to full-bodied, deep and ample, with a fleshy core of perfumed fruit animated by a pillowy mousse, concluding with a long, aromatic finish."
