Napoleon's troops called Berliner Weisse the Champagne of the North, and this beer takes its name from 1809, the era when the style was still brewed the old way — long before Berliners started adding a shot of syrup. Professor Fritz Briem — a lecturer at the Weihenstephan brewing school in Freising and a former keeper of its yeast bank — brews it as a historically faithful Berliner Weisse, and the method is genuinely old-fashioned: the wort is never boiled, only brought up to boiling temperature, then run into open fermenters and pitched with both brewer's yeast and lactic acid bacteria isolated from malt. It's bottle-conditioned with Lactobacillus delbrueckii, unfiltered and unpasteurized, so it keeps evolving after it leaves the brewery. In the glass it's bracingly tart and lemony, with a fine spritz, a soft wheaty core, and a bone-dry, thirst-killing finish. Serve it cold in a big bowl-shaped glass. Purists drink it straight; Berlin tradition adds a shot of raspberry or woodruff syrup — no judgment either way.
