The name is a portmanteau — Malvasia plus Arinto — and the marriage works: Malvasia de Colares brings soft white fruit and perfume, Arinto brings the spine. Malvasia de Colares is a genuinely rare grape, native to a sliver of Atlantic coast west of Lisbon and grown today by only a handful of producers. The fruit comes off a single hectare planted in 2013 at Janas, in the hills of Sintra, on a south-facing slope at 200 meters where calcareous clay lies over Jurassic limestone. Whole-cluster pressed and naturally fermented, it spends ten months on its gross lees in 225-liter French barrels averaging three years old, with a restrained 15% new wood. Of the estate's whites this is the one with both muscle and lift, and it makes the best case for what these old Atlantic varieties can do when somebody takes them seriously.

More about Quinta de San Michel

Leave the trendy wine bars of Lisbon – the hippest capital in Europe – and head west, and you will come across the vineyards of Quinta de San Michel. But you might think you have taken a wrong turn and ended up at the beach. In the tiny, historic appellation of Colares, the vines do not grow on tidy rows on slopes of clay or limestone. They crawl across deep sand dunes, battered by the salty winds of the Atlantic Ocean.

It is one of the most extreme terroirs in the world, and it produces one of Portugal's most singular white wines: Malvasia de Colares.

This is not the sweet, simple Malvasia you might know from other parts of the Mediterranean. Grown here, in the sand and sea spray, the grape transforms into something fierce, mineral, and profoundly savory. These are wines that don't just pair with seafood; they taste like the ocean itself.
