A vintage-dated, single-rancho extra añejo — the sort of transparency wine drinkers take for granted and tequila almost never offers. This one comes entirely from Rancho La Cañada, a gently south-facing slope sitting at an average 2,115 meters in the Jalisco highlands, tucked between two fields Ocho had already bottled in earlier years: La Latilla to the north, La Laja to the south. The rancho is named for the ravine along its eastern edge, where water runs only in the rainy season and cedars, ash and oaks grow on both banks. Three years in American oak barrels that previously held bourbon gives a more complex weave of sweetness, wood and agave than Ocho's younger releases — and not every harvest gets set aside for this category, which makes each extra añejo release its own small event. If you've only ever met extra añejo as a sweet, oak-dominated luxury pour, this is the version that still tastes like a place.
