The name is the recipe: a blend of three-, four- and five-year-old tequilas, put together by Enrique Fonseca at La Tequileña in Tequila, Jalisco. Fonseca is the fourth generation of a family that has farmed agave since the 1880s; unable to find a Mexican maestro willing to train him, he went to Scotland to study maturation and blending, then to Cognac, which is where his preference for French oak over heavily charred American barrels came from. Both oaks go into this blend, matured at a cellar 5,400 feet up in the mountains, from estate agave grown above 4,600 feet in Atotonilco El Alto and left to mature five to six years before roasting. It's bottled additive-free at 43.5%, and it drinks more like an aged brandy than a typical extra añejo. Sip it neat at room temperature.
