Organic Pioneer in Chablis: Thomas Pico's Hidden Gem

Thomas Pico might be better known for his acclaimed Pattes Loup wines, but his "secret" project, Domaine Bois d'Yver, is every bit as deserving – it’s just even rarer! 

Working organically in a region where few do, Pico has quietly been reviving his father's historic (but tiny) 2.5-hectare estate since 2015. This is a passion project, part of Pico's commitment to holistic agroecology: he takes the sort of pride in the fruit trees he's planted among his prized vineyards as others might in the acquisition of a new site or a new toy. 

What makes this Chablis special isn't just Pico's meticulous farming but the remarkable terroir of Courgis, situated between Côte Joannis and Beauregard. Here, old vines stretch their roots deep into the region's famous Kimmeridgian limestone soils, delivering a wine of unmistakable mineral precision. Hand-harvested from organically certified vineyards and fermented with native yeasts in stainless steel, the wine is a pure expression of  Chablis, unmarked by oak or manipulation.

Recent vintages have been particularly challenging for Pico, with devastating hail in 2016 and 2017 forcing him to blend what little survived into his Pattes Loup wines. This 2020 vintage represents a welcome return to form and a rare opportunity to experience his winemaking philosophy through Bois d'Yver—a wine that delivers all the hallmark freshness, complexity, and mineral intensity that has made Chablis legendary but with the added dimension that comes from organic farming and minimal intervention.
